Vegan Cake with Aquafaba and Aronia Berry



Hello Friends! This Cake is made with aronia powder. Acerola is rich in vitamin C, and also contains vitamin A, thiamine, riboflavin and niacin. I hope you will enjoy it!



INGREDIENTS:


For the Cake:

  • 400 g whole spelt flour
  • 50 g acerola powder
  • 50 g dates powder
  • 2 Tbsp vanilla extract
  • 250 ml cashew milk 
  • 100 g walnuts
  • orange zest


For the topping;


  •  aquafaba (water from a can of chickpeas)
  • 50 g dates powder
  • 30 g acerola powder


INSTRUCTION:


  1. Preheat the oven to 180 degrees and lay parchment paper on bottom.
  2. In a large bowl, mix all the cake ingredients until smooth.
  3. Bake at 180 C for 30 minutes.
  4. While the cake is backing, mix with a mixer in other bowl the aquafaba, acerola powder and dates sugar you have a smooth cream.
  5. Once the cake is ready and cooled, trim the aquafaba and sprinkle some fruits on top. Enjoy!

VEGAN AQUAFABA CAKE WITH FOREST FRUIT Hello Friends, i made this yummy aquafaba cake. Aquafaba is a genius ingredient and the texture is incredible.It is also made with oat flour that is gluten free. INGREDIENTS: Cake 1 Tbsp vanilla extract 2 Tbsp baking powder 2 Tbsp corn starch 50 ml coconut milk 50ml water 350 g out flour   CREAM aquafaba (water from a can of chickpeas) 100 g organic coconut sugar 100 g forest fruit 2 Tbsp corn starch INSTRUCTIONS  Preheat the oven to 180 C and lay parchment paper on bottom. In a large bowl, mix all the ingredients for the batter and mix to combine well. Bake at 180 C for 20-30 minutes . Vegan Cake with Peach Jam and Blueberries

I think the peach jam is one of the best jams that exists. That's why i made this yummy and refreshing cake.The consistence is very nice and it is also very healthy. The type of jam that i used is organic and only with apple juice sweetened. Ingredients:   1 Tbsp vanilla extract   2 Tbsp baking powder  100 ml cashew milk  50 g coconut milk yogurt  200 g peach jam or any kind of jam you like  50 g blueberries  350 g whole spelt flour   50 g dates Instructions:  1.Preheat the oven to 180 degrees. 2.In a large bowl, combine the vanilla extract, baking powder, cashew milk, coconut milk yogurt, dates and flour. 3.Line the cake tin with parchment paper, then pour the batter into the tin. 4.Bake it for 25-30 minutes. 5.Let the cake fully cool. 6.Spread the peach jam on the top of the cake. 7.Decorate with blueberries.Enjoy  Share and follow me if you like my recipes!
