Vegan Pancakes with Apricot Jam



Vegan Pancakes with buckwheat flour and raspberries. Buckwheat improves heart health, contains disease-fighting antioxidants, high fiber and can help prevent diabetes.

INGREDIENTS:

  • 500 g buckwheat flour
  • 100 g raspberries
  • 2 Tbsp backing powder
  • 2Tbsp vanilla powder
  • 100 ml rice milk


INSTRUCTIONS:


  1. Mix all the ingredients together, until smooth.
  2. Heat a pan to medium heat.
  3. Place the mixture into the pan.
  4. Flip when is ready.
  5. Repeat until he batter is gone.
  6. Serve with jam or other things you prefer. Enjoy!

Take a large bowl and mix the flour with the dates sugar, coconut milk, vanulla extract and lemon zest. Mix them well until smooth. Bake the cake about 30 minutes. Cool the cake, and take the walnuts ,acerola powder and the dates sugar and mix them into a food processor. Put the mix on top of the cake, and spread the forest fruit also. Enjoy!

Vegan Cake with Aquafaba and Aronia Berry

Hello Friends! This Cake is made with aronia powder. Acerola is rich in vitamin C, and also contains vitamin A, thiamine, riboflavin and niacin. I hope you will enjoy it! INGREDIENTS: For the Cake: 400 g whole spelt flour 50 g acerola powder 50 g dates powder 2 Tbsp vanilla extract 250 ml cashew milk  100 g walnuts orange zest For the topping;  aquafaba (water from a can of chickpeas) 50 g dates powder 30 g acerola powder INSTRUCTION: Preheat the oven to 180 degrees and lay parchment paper on bottom. In a large bowl, mix all the cake ingredients until smooth. Bake at 180 C for 30 minutes. While the cake is backing, mix with a mixer in other bowl the aquafaba, acerola powder and dates sugar you have a smooth cream. Once the cake is ready and cooled, trim the aquafaba and sprinkle some fruits on top. Enjoy!
