Vegan Cake with Raspberries and Dates
Hello Friends, i made this colorful and delicious cake with one of my favorites fruits, raspberries.
They are rich in vitamins, antioxidants and fiber, and also have a high concentration of ellagic acid, that prevents cancer.

Ingredients:
For the base:
- 300 g oat flour
- 2 Tbsp baking powder
- 1 Tbsp lemon zest
- 50 ml cashew milk
- 50 g frozen raspberries or fresh
- 100 g dates
- 2 Tbsp vanilla extract
- 2 Tbsp potatoes starch
For the Topping:
- 50 ml coconut cream
- 30 g coconut sugar
- 1 Tbsp chlorella powder
Instructions:
- Preheat the oven to 180 degrees. Take a 8x4 inch pan and spread some flour on the bottom.
- Mix together in a bowl all the ingredients for the base, and mix well until combined.
- Bake for 30-40 minutes.
- Remove from oven and let it cool for 10-15 minutes.
- For the topping mix all the ingredients together until creamy.
- Spread this over your cake. Enjoy
