Raw vegan Blackberries Cake

Raw vegan cakes are a very delicious and healthy option for everyone. It is made with walnuts, and they are also an excellent source of anti-inflammatory omega-3 essential fatty acids, in the form of alpha-linolenic acid.
The cake is also organic and gluten free.**

Ingredients:

  • 100 g walnuts
  • 100 ml coconut milk
  • 100 g cashews, soaked overnight
  • 100 g dates, soaked overnight
  • 100 g blackberries
  • 2 Tbsp raw agave nectar  
  • flours



 Instructions:


  1. Line a pan with parchment paper.
  2. For the crust place the dates and the walnuts in a food processor and mix well.
  3. Spread the mixture into the pan.
  4. Place the cashews in the food processor along with the coconut milk, blackberries, agave nectar and the blackberries.
  5. Process until you obtain a smooth cream.
  6. Pour the mixture in the pan on top of the crust.
  7. Also place the flours on top of the cake.
  8. Freeze for 2 or 3 hours.
  9. Until serving, let it stay at room temperature for 15-20 minutes. Enjoy

  VEGAN RASPBERRIES MINT ROLL CAKE I made this delicious vegan cake. It is also very easy to make and satisfying.   Ingredients: CAKE 1 Tbsp vanilla extract 2 Tbsp baking powder 100 ml rice milk 50 ml coconut milk 350 g spelt flour  FILLING 100 g raspberries 10 g fresh mint 50 g dates   50 g walnuts 30 ml rice milk INSTRUCTION  1. Preheat the oven to 180 C. 2. Add the vanilla the baking powder,coconut milk and mix them all together. Add also the flour and the rice milk.The batter should bee thick.Taste and adjust flavor as needed. 3. Slowly start rolling up the dough from one side until you have a firm roll. 4.For the filling, simply place all the ingredients in a high-speed blender and mix until you get a smooth filling. 5.Pour the filling over the roll and start rolling. 6.Bake 20-30 minutes or until is golden brown .
