Vegan Red Lentil Stew

Serves: 2
INGREDIENTS
- 100 g red lentil
- 50 g rice
- 3 Tbsp tomato paste
- 1 onion
- 1 Tbsp coconut oil
- 2 gloves garlic
- half of paprika
- 1 medium carrot
- 50 g spinach
- 50 ml coconut milk
- 200 ml water
- ¾ chili
- ⅛ curry
- salt
INSTRUCTIONS
- Dice the onion and the garlic, and put them in a pot with coconut oil and a tbsp water and cook them about 5 minutes.
- While the ingredients are cooking, peel the carrots and cut the paprika.
- Add the tomato paste, the paprika,the carrots and 50 ml water in the pot. Let it cook about 10 minutes.
- Also add the rice, lentil, the spinach, the coconut milk, the rest of water, chili, curry and salt.
- Turn the heat down to medium and and let it cook for 25 minutes. Serve warm. Enjoy
